Recipe D835 is the less fluid recipe of the 835, revealing an intense taste with a solid cocoa character, yielding a pleasant bitterness topped off with hints of nutmeg and vanilla.
It contains about 4% less cocoa butter and is perfectly suited for moulding bigger hollow figures in one go. It is also a great dark chocolate to make intense ganaches with an intense bittersweet cocoa taste and fillings for enrobed pralines with a smooth mouthfeel.
Recipe D835 pairs perfectly with ingredients that have a powerful and acidic taste such as warm citrus fruits, exotic fruits, black cherries, etc.
